Strawberry Pound Cake (Gluten Free, Dairy Free)

This is my favorite dessert of springtime, and well worth the effort after a morning of strawberry picking.

I adapted the pound cake recipe from a recipe of my mother’s. We always ate our strawberries with pound cake, rather than shortcake. I freely admit that we often bought pound cake at the store so the only trouble was slicing the berries, but home-baked is always tastier (and in our case, allergen-free).

Strawberries and Pound Cake

For the Strawberries

4 cups (a quart) of fresh strawberries, washed, hulled, and sliced

1 Tbsp honey

1 Tbsp lemon juice

Gently combine all items in a large bowl. Cover and refrigerate while you bake the cake so strawberries become soft and juicy. If you’re using a store-bought cake, allow at least an hour for the strawberries to sit before serving.

For the Pound Cake

2 1/3 cups gluten free flour mix, plus more for pan

1 tsp baking powder

1/2 tsp salt

1 tsp xantham gum (omit if your mix contains this)

2/3 cup dairy-free margarine, softened, plus more to grease pan

1 1/4 cup white sugar

3 eggs

1/2 cup soy milk or other dairy-free milk

1 Tbsp lemon juice

Preheat oven to 350.

Using margarine and flour mix, grease and flour a loaf pan.

Into a medium bowl, sift flour mix, baking powder, salt, and xantham gum.

With a mixer, beat margarine, sugar, and eggs until light and fluffy.

Combine soy milk and lemon juice in a measuring cup. Add to margarine mix little by little, alternating with spoonfuls of flour mix.

Gently pour into prepared pan and bake for one hour, or until toothpick inserted comes out clean.

Allow cake to cool 5 minutes in pan, then turn out onto a plate.

To Assemble:

If your non-dairy topping needs to be whipped, whip it.

Slice the pound cake.

Gently spoon strawberries and juice on top.

Spoon whipped topping on top of that.

Enjoy! Repeat as desired.
